Korean Beef Radish Soup

Ingredients: -1 pound lean ground beef -1 large onion, chopped -2 cloves garlic, minced -1 tablespoon fresh ginger, grated -1 teaspoon sesame oil -2 large radishes, diced -6 cups beef broth -1/4 cup soy sauce -1/4 cup rice wine vinegar -2 tablespoons gochujang (Korean red pepper paste) -1/2 teaspoon black pepper -1 teaspoon sugar -1 teaspoon toasted sesame seeds -1 scallion, thinly sliced -2 tablespoons cornstarch -2 tablespoons cold water Instructions: 1. Heat a large pot over medium heat. Add ground beef and cook, breaking up the meat with a wooden spoon, until the beef is cooked through and lightly browned, about 8 minutes. 2. Add the onion, garlic, and ginger and cook until the onion is softened, about 3 minutes. 3. Add the sesame oil, radishes, beef broth, soy sauce, rice wine vinegar, gochujang, black pepper, and sugar. Bring to a boil and reduce heat to low. Simmer for 25 minutes. 4. In a small bowl, whisk together the cornstarch and cold water until smooth. Slowly add the cornstarch mixture to the soup while stirring constantly. Simmer for an additional 10 minutes until the soup has thickened. 5.
