Asian Vegetable-Beef Soup

Ingredients: -2 tablespoons vegetable oil -1 onion, diced -2 cloves garlic, minced -1 pound lean ground beef -1 teaspoon ground ginger -1 teaspoon ground coriander -1 teaspoon ground cumin -1 teaspoon curry powder -1/2 teaspoon ground cinnamon -1/2 teaspoon ground red pepper -1 (14.5 ounce) can diced tomatoes, undrained -2 (14.5 ounce) cans beef broth -1 cup water -1 (8 ounce) can sliced water chestnuts -2 cups sliced fresh mushrooms -1 cup sliced carrots -1/2 cup sliced celery -1/4 cup chopped fresh cilantro Instructions: 1. Heat oil in a large pot over medium heat. Add onion and garlic and cook for 3 minutes, stirring occasionally. 2. Add the ground beef and cook until no longer pink, about 5 minutes. 3. Add the ginger, coriander, cumin, curry powder, cinnamon, and red pepper and cook for 1 minute, stirring constantly.
